Since this month is all about nutrition, I keep fit and eat healthy through my food choices. I must share my fondness for an unbeatable vegetable: beets. Beets are one of those polarizing foods that you either love or hate. I relish this brightly colored veggie.

 

 

As a skinny kid, I dreaded eating most vegetables. As an adult, I now welcome all the nutrients beets provide, which taste yummy. I don’t believe my love of beets is just a health craze. I see many restaurants serving beet salads or beets on their menus.

I find beets to be un-beet-able for what they offer the body.  These colorful root vegetables contain potent nutrient compounds that help protect against heart disease, birth defects, and certain cancers, especially colon cancer. In addition, as noted in the above image, beets help to support the liver and gallbladder by eliminating toxins while influencing fat metabolism. Fat metabolism! Say what! There is more reason to include beets in your healthy food choices.

In addition to the beet recipe above, I juice beets, including the beetroot and  greens, for this tremendous healthy drink:

Two beets, tops intact
Two carrots (I like to use baby carrots)
Two apples ( I use my fave apples, Gala)

Using a juicer, process beets, beetroots, carrots, and apples. Whisk and pour into glasses. Serves 1 –  2.

I plan to purchase a veggie spiralizer to enjoy more ways to include beets in my diet, especially salads. What about you? Do you love or hate beets?
