Since this month is all about nutrition. One way I keep fit and eat healthy is by my food choices. I must share my fondness for an un-beet-able vegetable, beets. Beets are one of those polarizing foods that you either love or hate. I relish this brightly colored veggie.
As a skinny kid growing up, I dreaded eating most vegetables. Now as an adult, I welcome all the nutrients that are provided by beets and they taste so yummy. I don’t believe my love of beets is just a health craze. I see many restaurants serving beet salads or beets on their menus.
I find beets to be un-beet-able for what they offer the body. These colorful root vegetables contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers especially colon cancer. In addition as noted in above image, beets help to support the liver and gallbladder by eliminating toxins while influencing fat metabolism. Fat metabolism! Say what! The more reason to include beets in your healthy food choices.
I addition to the beet recipe above, I juice beets including the beetroot and greens for this great healthy drink:
2 beets, tops in tact
2 carrots (I like to use baby carrots)
2 apples ( I use my fave apples, Gala)
Using a juicer, process beets, beet roots, carrots and apples. Whisk and pour into glasses. Serves 1 – 2.
